“Just beat it, beat it, beat it no one wants to be defeated, showing how funky and strong is your fight, it doesn’t matter who’s wrong or right, just beat it, beat it, just beat it…..” This is one of my favorite Michael Jackson songs that was released back in 1983, I was 13. I can still picture the video playing on MTV clear as day, the white, red and black leather jackets, studded belts, bandanas and 2 rival gangs out to fight that ended in an amazing well-choreographed dance. This was an era when MTV which started in 1981, was still in its infancy and only played music videos. But I am not talking about that kind of “beat” although I could go on all day about the 80’s, no I am talking about the vegetable “beet”, the delicious vibrant red / purple power veggie.
I am one of those people who love beets. They very often get a bad rap (much like Michael). I will eat them raw shredded on a salad, juiced, roasted in simple seasoning, pickled or dehydrated into chips. They grow in different colors of red, purple, orange, yellow or white. (the red stains everything!) They are a root vegetable from the botanical family chenopodiaceae and the whole plant is edible which is loaded with nutrition. They have a distinctive earthly flavor or some would say they taste like dirt. But when paired with sweet, fresh, citrus or sharp flavors they are even more amazing bringing out their sweetness. The greens can be sautéed in tossed in stir fry or a tofu scramble, juiced with the beets, or added to smoothies.

So, being an athlete, wanting to stay healthy by eating a whole plant based diet and the simple fact that I love beets, my husband and I always eat them every day in some form. Although I don’t always agree with supplements, if you are one of those people who really don’t like them, then you can purchase beet powder, juices and pills however make sure that the only ingredient listed are beets. Well, I guess you could say that Michael and beets have one thing in common, either you love ‘em or hate ‘em there is no in between. But I can assure you that this beat…. I mean beet sauce will not disappoint you in flavor. If you were not a beet fan before, you will be now. I created this pesto sauce for something different on pasta. I added steamed spinach, fresh tomatoes and olives on top for an amazing dish. Talk about carb loading for a race the next day. Between this and listening to Michaels Jackson’s song “Beat It” I will have one great run!

Yields: 4 cups (can freeze half it makes a lot)
