The weather on my phone says it’s going to be in the upper 80’s this week with high humidity. Yup summer has finally arrived. More time to run, bike and walk the dogs outside. This season in an effort to change up my cardio a bit, I decided to buy myself a new pair of roller blades. Mind you I have not been on a pair in about 15 years and before that I grew up with roller skates. Yup Friday nights hanging out with my friends at the local indoor rink was the thing to do. Complete with big hair sprayed with a can of Aquanet so not one strand would move out of place, big hoop earrings, chewing gum, those cheap colored rubber bracelets and of course leg warmers. Yes I grew up in the 80’s skating to Madonna’s Borderline and Cyndi Lauper’s “Girls Just Want to Have Fun”. So it’s been a while but, I am determined get into a new pair of rollerblades and start skating, piece of cake.
The box was delivered at work so when they finally came in, I sat at my desk and stared at it for a while before opening it. After finally cutting the box open, I took one skate out, looked at the black boot with light green trim and slick smooth wheels and thought wow this is cool. While holding it and spinning the wheels with my hand, I get excited while visualizing riding my blades on a warm summer day with helmet, fancy sunglasses, headphones, and gear complete with fanny pack, gliding and zig zagging at high rates of speed on the bike path. I am doing fancy moves to avoid twigs and rocks while passing by a few runners and kids on bikes smiling and saying hello wiping the sweat off my face, yes I am a superstar! I smile to myself lost in my thoughts and put the skate back in the box anxiously waiting to get them home.
The first thing I do after walking in the door is drop everything and take my new skates out of the box. Finally after 10 minutes of prying, pulling and tugging, I get them on, I go to stand up and quickly grab the nearest thing to catch my balance to stop from wobbling. My immediate thought was while my heart was pounding, am I out of my mind, what in the world was I thinking? Ok with all serousness and deep concentration, I let go and stand for a moment not really wanting to move, and then begin to roll a bit slowly beginning to skate around in my apartment’s hard wood floors. Feeling slightly more confidence, I decide to let go of things this time and actually free skate. I am wobbling around like someone is shaking the ground beneath but, then I gain some control and begin to remember how to do this and the look of fear turns into a smile. I do a few more laps, practice the brake, do a little maneuver then slightly lose my balance again and startled my dog as she ran up stairs to hide and stay clear of my blades.
So, that was enough practice for one day, not quite the superstar that I had envisioned more like super rookie. I might want to practice for a while before actually getting outside otherwise I will be holding onto trees, fences and grabbing onto other people as I pass by which may cause an unpleasant reaction. I put my rollerblades back in the box, smile and think ok I got myself a new challenge to take on. In the meantime all that skating and holding on the furniture made me hungry. Sense it is summer time and we are now so busy with outdoor activities and being at the gym, we need a cool simple, quick and nutritious meal to keep us going, one with lots of carbs for energy, protein to keep us strong and a few essential fats. This superstar sandwich is made with glazed tofu, sautéed portabella mushroom, cucumber dill salad with rosemary roasted potatoes on the side. This the perfect rollerblading fuel with amazing flavors.
Superstar Tofu Sandwich
Cucumber Dill Slaw
Yields: about 8 cups
Time: 30 minutes (if using a food processor, may be few minutes longer is cutting by hand)
1 cucumber sliced in food processor (or by hand)
½ cup chopped purple cabbage (faster in food processor)
1 can chick peas rinsed
1 cup cherry tomatoes diced
2 heaping tablespoons follow your heart pesto mayo
3 tbsp. cornichons chopped
Bunch of dill chopped (maybe 4 tbsps. I eye balled this to taste)
Handful fresh cilantro and parsley chopped
Salt pepper to taste
Once all veggies are chopped mix all the ingredients together. You can add more seasonings if you wish, feel free to play around with the taste. Chill in the refrigerator for at least an hour before serving.
1 block extra firm tofu (I used 365 brand non GMO)
1 portabella mushroom (optional)
½ cup low sodium tamari
1 tsp. sesame oil
3 tbsp. maple syrup or other sweetener
2 tbsp. nutritional yeast
1 tbsp. yellow mustard
1 tbsp. siracha
1 tbsp. garlic powder
Dash of black pepper to taste.
Rosemary roasted potatoes
2 small mess bags of the little tiny multi colored potatoes (I got mine at Trader Joes)
1 ½ melted tbsp. coconut oil
2 tbsp. fresh rosemary chopped
1 tbsp dried oregano
1 tbsp. dried basil
Salt and pepper to taste
21 blend seasoning (trader Joes) to taste
