Summer time is once again upon us. Where A/C is the only relief from unmanageable hair, sweat glistering, cloths clinging, ice coffee melting and sunburns. Some despise the heat and would rather live in a region where it is cold most of the time, cozy fireplaces, layers of cloths, snow bunnies, ski and snow boarding athletes, and Eskimos. Some live for the summer and live in regions where it is hot all the time, surfers, swimmers, beach bums, tans and bikinis, runners and bikers. These people put up Christmas decorations wearing shorts and flip flops. Quite frankly this is my kind of region and where I would love to be all year round. But for now, I live where some would say we get the best of all worlds. I get the beautiful colors of Autumn, freezing snowy Winters, blossoming Springs and the heat of the Summers. Some would say that I don’t know how good I have it but, come talk to me when there is 3 ft. of snow on the ground and temps are a chilly 5 degrees. Anyway, what does all this have to do with these delicious treats you see?
It is not only flip flop and barefoot season (I personally would rather be barefoot 24/7) but, it is the season of vibrant fruits and vegetables of all colors, shapes and sizes. The farmers markets are thriving with people walking around in the bright warm sun with their cloth bags filled up with fresh cut greens poking out, cartons of blueberries and strawberries, zucchini’s, cucumbers, summer squash, tomatoes of all shapes and sizes, lettuce and of course fresh baked breads and treats. I feel like a kid in a candy store every time I go, wanted to skip around with my bag of goodies. I gather up as much as I can each week taking advantage of this short season. I sometimes take my 2 ½ yr old granddaughter with me. She loves running to each vendor to help pick out the best foods. She can’t wait to get back while reaching in my back to quickly sneak a few blueberries or strawberries. She stops and pets each passing dog that is always eager to say hello then dances to the blue grass band that is playing.
Fresh and local fruits only last such a short time and before you know it, the season is over. Strawberry’s only stick around from the end of May to early July. So I usually scramble up as much as I can during that time. So this is pretty late in the season and not too many farms have much left as I panic to get the last ones left. Yet I did manage to find just a few left. I wanted to make something fun with them, something that I can easily grab, maybe an energy bite for that little extra push before a run or going to the gym. What’s better than running and biking season with little fresh energy bites for a quick burst? They are super easy and quick to make with dates, shredded coconut and coconut flour all thrown in a processor. But, then I wanted to add a little extra goodness so I decided to dip them in chocolate. Yup strawberries and chocolate are little pieces of heaven in your mouth! And my granddaughter loved them to.
