New Year’s Eve 2007 and a resolution changed my life forever. I decided to quit smoking, change my unhealthy eating habits and start exercising. I wanted to run a 5K so I trained with a good friend and was instantly hooked. Staying on my healthy path, I decided to go back to school and earn my Bachelor’s in Health & Wellness. Then, after watching the movie Food Inc., I was so moved and devastated by how animals are treated that overnight I became vegetarian. I wanted to learn everything I could about the food industry so I read every book and watched every documentary and still do to this day for example, Forks over knives, Slaughterhouse, China Study, Whole and many others. It didn’t take long for me to become vegan.
I also learned the dark side of the SAD (standard American Diet) and how we are consuming chemicals, artificial ingredients, GMO's, and how the government, pharmaceutical companies, and big agribusiness works and the effects it has on our bodies, the environment and the animals. Health whole foods has become my passion and I fell in love with cooking and knowing I was giving my body the right nutrients to grow and thrive.
I eventually earned my certificate in plant based nutrition from Dr. Campbell author of the "China Study" at Cornell University. Today 6 years after my resolution, my whole foods vegan lifestyle and lots of hard training has brought me to accomplishing marathons including qualifying and finishing Boston, placing in half marathons in my age group, bike century rides, competed in a bodybuilding show 2015, and practice yoga. I have been featured in Vegan Health & Fitness magazine and wrote articles for Happycow.net. I met my husband at a half marathon at the time he was a vegetarian for 25 years, he proposed at the finish line of a full marathon and we got married in Las Vegas 2013 where we exchanged vows at the start of a half marathon. He has sense crossed over to a whole foods vegan with me.
Both my husband and I have never been healthier, we feel great and alive, recover very quickly from workouts, have tons of energy, our hair and skin glows. My goal in the future is to continue to learn and grow as much as I can, creating new dishes and to have a vegan café, and to continue new heights in running and in weightlifting being the best I can be every single day. I created this blog to share my journey and passion in recipes, food pictures, running and my vegan lifestyle experiences. I hope you learn a few things from my stories cook some of these delicious recipes and learn how it feels to reach optimal health from the inside out.
